François Carillon Chassagne 1´Cru Les Macherelles 2020
François Carillon's vineyard, Les Macherelles, located in Chassagne-Montrachet, spans 0.57 hectares and is dedicated to Chardonnay. Established in 2003, the vineyard is set on marl, limestone, and sand, and is cultivated following "lutte raisonnée" principles, avoiding herbicides and employing traditional plowing methods. Careful pruning and selection ensure a low yield with high concentration. The wine undergoes fermentation with natural yeast and is aged for 12 months in small oak barrels (20% new) followed by 6 months in stainless steel tanks. It is lightly fined and filtered before bottling. Chassagne-Montrachet Les Macherelles presents a pale golden hue and an aromatic bouquet featuring exotic fruits, citrus, and a hint of smoke. The palate is rich, with a well-structured body and notable minerality. It pairs excellently with grilled fish, seafood, or oysters. François Carillon
