Pio Cesare Fides Barbera d’Alba 2016 er en fremragende vin, hvor druerne oprindeligt kommer fra Colombaro-marken nær Ornato i Serralunga d’Alba. Fra og med 2017-årgangen er druerne hentet fra de ældste vinstokke på Mosconi-marken i Monforte d’Alba. Efter høsten og en omhyggelig selektering gennemgår vinen en gæring og maceration i ståltanke i 25 dage. Den modnes derefter i 18 måneder, hovedsageligt i store 2. 000 liters botti og delvist i franske 225 liters barriques. Vinen præsenterer en krydret fylde med nuancer af rig frugt, våde træfade, tjære, bacon, grafit, blæk, kul, merian, brombær, tranebær, ribs, blommer, knust sten, tobak, læder samt kanel og vanilje fra fadlagringen. Smagen afslører blåbær, sorte kirsebær, frisk frugt, en let bitterhed, og er rund og saftig med noter af jord, skovbund og en vis fyldighed. Vietti Barbera d'Alba Trevie DOC 2022 Den udsøgte Barbera d'Alba "Trevie" er lavet udelukkende af Barbera-druer, primært fra tre unikke vinmarker beliggende i Monforte, Castiglione Falletto og La Morra, hvilket inspirerer navnet "3 vinmarker". Derudover hentes druerne også fra andre områder i Langhe. Vinstokkene er mellem 25 og 40 år gamle, og jorden er rig på kalk og ler, hvilket er typisk for regionen. Gæringsprocessen finder sted i ståltanke og varer omkring to uger, hvor der dagligt foretages overpumpninger og omrøringer. Efter presning gennemgår vinen en malolaktisk gæring, også i ståltanke. Modningen sker over 12-15 måneder i en blanding af barriques, store træfade og ståltanke. Barbera "Trevie" præsenterer sig med en strålende rubinrød farve og byder på aromaer af modne kirsebær og blommer med et hint af vanilje. Smagen er harmonisk med en fin balance mellem friskhed, frugt og struktur, og den efterlader en elegant eftersmag med en subtil trænote. Pio Cesare's Barbaresco showcases the winery's mastery in crafting Barbaresco wines, particularly from the Il Bricco and San Stefanetto vineyards in Tresio. The soil composition is reminiscent of Barolo's Serralunga d'Alba, imparting a similar character to the wine, yet achieving a velvety texture more swiftly. The grapes are meticulously handpicked and carefully sorted. After destemming, they undergo fermentation in temperature-controlled stainless steel tanks with skin contact for 25-30 days. About 35% of the wine is aged in new French barriques for 30 months, while the remaining 65% matures in large French oak casks. The wine is then rested for an additional six months in Pio Cesare's cellars before release. This wine features a brick-red rim and offers aromas of roses, strawberries, plums, tar, orange peel, forest floor, and dried herbs. The palate reveals red fruit with a creamy texture, supported by a good acid structure and balanced tannins. This Barbaresco pairs beautifully with creamy pasta dishes featuring sautéed mushrooms and sage, grilled veal, or beef with root vegetables.
